How to price baked goods

Home bakers almost universally underprice, because ingredient cost feels like the whole cost — and it is usually under a quarter of it.

How home bakers actually price their work

There is no single right structure — but there is usually a right one for each kind of job.

Per item / per dozen

Cookies, cupcakes, breads. Simple to quote and easy to compare, which also makes it the most price-pressured.

Per serving

Celebration and tiered cakes, typically $4–$12 per serving depending on decoration complexity.

Cost-plus multiplier

The standard safety net: ingredients x 3 to 4, then sanity-check against your hourly rate.

The mistake that costs home bakers the most

Pricing at ingredients x 2 and calling the rest profit. That multiple does not cover your time, packaging, failed batches, or the two hours of decorating a custom order actually took. Bakers who price this way find their busiest months are their least profitable.

What home baking overhead actually looks like

These are the defaults behind the calculator. Yours will differ — change the overhead figure above to match.

Common questions about home baking pricing

How do I price baked goods for a home bakery?

Total your ingredient cost per batch, divide to a per-item cost, multiply by 3–4, then check that the resulting price pays you at least your target hourly rate for the time the batch actually took. If the two disagree, the hourly figure is the real one.

How much should I charge for a custom cake?

Per-serving pricing is standard: $4–$6 for simple buttercream, $8–$12+ for fondant, sculpted or heavily detailed work. Decoration time, not size, drives most of the difference.

Do I need a licence to sell baked goods from home?

Most states allow it under cottage food laws, but the permitted products, revenue caps and labelling rules vary substantially. Check your state rules before pricing, since a revenue cap directly limits your business model.

How this calculator works

The starting point is the Bureau of Labor Statistics Occupational Employment and Wage Statistics survey (May 2024), which reports what home bakers earn as employees in each state.

An employee wage is not a business rate, and treating it as one is the most common reason home-based operators price below cost. An employer covers half your payroll tax, your benefits, your paid leave, and every non-billable hour of your day. Self-employed, all four come out of the same rate.

So the calculator grosses the wage up for self-employment tax (15.3% on 92.35% of net earnings), adds roughly 28% for benefits you now self-fund, adds your overhead, applies a 15% margin, and then divides by billable hours only — not hours worked.

These are estimates. Your market, specialisation and reputation move the number, and every assumption above is adjustable so you can disagree with ours.
